SPRING 2025 & WILD EDIBLE PLANTS
WILD EDIBLE PLANTS – PRESENTATION
- Tallberg shares his philosophy on wild edible plants and -mushrooms, developed through 20 years of active foraging experience.
2 x FORAGING SESSIONS
- Participants will learn to identify a total of 15 wild edible plants, foraging methods, the edible parts of all these plants, different foraging phases throughout the harvest season (six months per vintage) and a comprehensive understanding of their flavour profiles.
2 x KITCHEN SESSIONS
- Tallberg provides instructions for each plant: washing, handling, storing, and other essential details to make the most of these unique and nutrient-dense plants in the kitchen.
2 x LUNCHES
- Unique lunches are prepared together using the bounty from each foraging session, guided by Tallberg. These experiences embed the knowledge into "muscle memory" and flavour memory – allowing participants to fully embrace the world of wild herbs. Participants will enjoy three distinct, unforgettable meals, diving deep into the fascinating and nutrient-rich world of wild plants.

SEPTEMBER 2025 & WILD MUSHROOMS
WILD EDIBLE MUSHROOMS – PRESENTATION
- Tallberg shares his philosophy on mushrooms as food and the incredible offerings of the wild. Wild mushrooms are a fantastic ingredient group to be as valued as wild fish, game, shellfish, and molluscs.
2 x MUSHROOM FORAGING
- Participants will learn to identify at least 10 wild mushrooms and understand the key forest types in which to find them. They will explore their flavour profiles and heavenly pairings for each mushroom.
2 x MUSHROOM KITCHEN SESSIONS
- Tallberg demonstrates the handling of various mushroom types, including cleaning, storage, and essential preparation techniques to bring out the best in each mushroom. Expect outstanding cooking methods, flavour experiences and insights!
2 x MUSHROOM LUNCHES
- Unique lunch is prepared together using the bounty from the shroom foraging session, guided by Tallberg. This experience embeds the knowledge into "muscle memory" and flavour memory – allowing participants to fully embrace the world of edible wild mushrooms. Participants will enjoy a distinct, unforgettable meal, diving deep into the fascinating and nutrient-rich world of five to 10 different edible wild mushrooms.
