Tallberg designed the menu structure for Finland's oldest up 'n' running hotel, located in the idyllic Punkaharju, based on the annual cycle of seasonal ingredients. He hired and trained the staff, ensuring smooth restaurant operations right from the opening. Later, the restaurant was entrusted to new head chefs Miika Lönn and Mikko Leskinen, who brought their complementary culinary ideologies to the kitchen. Four years after opening, Tallberg returned to Punkaharju for 18 months as Executive Chef, revamping the menu under the beloved Sami Tallberg x Hotel Punkaharju concept.
